ATURA: plant protein concentrates

The demand for plant-based alternatives to animal proteins is increasing steadily, not only to meet the needs of people who have chosen a vegetarian diet, but also among those who want to increase their consumption of pulses.

It is increasingly common to find shelves and sometimes entire departments in supermarkets dedicated to plant-based alternatives to meat, eggs and dairy products, such as meatballs, burgers, mayonnaise, sliced cheese, spreadable cheese and even preparations for desserts and cakes that are free of animal-derived ingredients.

All these products contain formulations based on pulse flours, suitable for improving both the nutritional and protein profile and consistency.

Organic, high quality protein concentrates

ATURA is committed to continuous scientific research intended to draw the best nutritional properties from plant sources. This has led to the production of pulse protein concentrates from sustainable cultivation, formulated to guarantee a high quality profile and suitable for increasing the level of essential amino acids and minerals, such as magnesium and potassium.

ATURA protein concentrates are obtained from three pulses in particular, all organically grown:

Chickpeas: chickpea protein concentrate is particularly versatile, gluten-free and suitable for both sweet and savoury preparations and alternative dairy products. Chickpeas are an excellent source of protein, fibre and minerals, as well as being low in saturated fat. The chickpea-based ATURA formulation has a delicate flavour, a creamy and soft texture, and imparts a slightly sweet flavour to baked goods, as well as blending particularly well with stronger flavours.

Red lentils: red lentil protein concentrate is a gluten-free flour, ideal for a wide range of applications, especially savoury ones, including baked goods, processed foods, soups and snacks. It is extremely popular because it offers an excellent combination of proteins, fibre, complex carbohydrates and minerals. It has a delicate flavour and a soft consistency.

Broad beans: similarly to other protein concentrates, broad bean concentrate is also gluten-free. It is suitable for sweet and savoury preparations, with a delicate, non-grassy flavour and a creamy consistency. It is an excellent source of protein, fibre, complex carbohydrates, iron and potassium, as well as having a low saturated fat index.
